PROBLEM TO BE SOLVED: To provide a garnish cutter, or a cutter for garnish of Japanese radish, in which the Japanese radish can be efficiently cut to form long, thin, and soft pieces of garnish in uniform width and with favorable texture.;SOLUTION: Width cutting edges of the garnish cutter are disposed almost perpendicularly to thickness cutting edges. The width cutting edges are disposed to be in close contact with the tip of the thickness cutting edges on their back. For the width cutting edges suitable for producing thinner pieces of garnish, all the width cutting edges are disposed in parallel in rows without forward-back deviation between the adjoining width cutting edges. For the width cutting edges suitable for producing mid-sized pieces of garnish, the adjoining width cutting edges are disposed in parallel with forward-back deflection to alleviate damage to radish tissues due to compression force generated between the adjoining width cutting edges.;COPYRIGHT: (C)2008,JPO&INPIT
