PROBLEM TO BE SOLVED: To provide an opening and closing device for automatically carrying out the operation of opening and closing a double-side baking tool in the operations for producing the baked food such as Taiyaki (fish-shaped pancake filled with bean jam) and Ningyouyaki (doll-shaped pancake filled with bean jam).;SOLUTION: The opening and closing device of the double-side baking tool 2 having a pair of baking molds mutually connected with a hinge part so as to be freely opened and closed is equipped with a hook 63 capable of being engaged at a position apart from the hinge part to the baking mold at the upper side when flatly placed in a closed state, and a hook-moving means 64 for moving the hook 63 in an arc so as to move along the opening and closing locus drawn by the position to which the hook 63 is engaged when the upper baking mold is opened upward by using the hinge part as a fulcrum.;COPYRIGHT: (C)2008,JPO&INPIT
