PROCEDURE FOR USING THE CHITOSAN EXHIBITOR AS A REMOVER OF DISTILLED Toxic Secondary Congeners, MAINLY OF CANE OR CACHAÇA. The present invention relates to a process for purifying distilled beverages by the use of chitosan for the removal of secondary or similar compounds present, which are responsible for the negative (toxicological) effects of beverage ingestion and unpleasant tastes. More precisely, the present invention is directed to a new process for obtaining quality cachaça, which consists in using the chitosan substance to remove certain undesirable elements from the cachaça brandy, such as the removal of various aldehydes present in the cachaça, such as acetaldehyde, formaldehyde, n-butyraldehyde, benzaldehyde, valeraldehyde, furfural and hydroxymethylfurfural and esters such as ethyl acetate, ethyl carbamate, ethyl caprylate and others.
