A xanthophyll ester comprising hydroxyl group(s) and nutritionally beneficial activated carboxylic acid derivative consisting of lipoic acid and/or dihydrolipoic acid is new. New xanthophyll ester comprising hydroxyl group(s) and nutritionally beneficial activated carboxylic acid derivative(s) is one of 15 compounds e.g. of formulae (I), (II), (III), (IV) or (V). R1, R2, R3H, acyl fatty acid residue or acyl nutritionally beneficial carboxylic derivative residue (preferred). Provided that at least one of R1, R2, R3 is an acyl residue of a nutritionally beneficial carboxylic derivative or its mixtures. Independent claims are included for: (1) a method of preventing or inhibiting free radical oxidation in a mammal comprising administering an antioxidative amount of the xanthophyll ester compound; and (2) a method for preparing the xanthophyll ester compound.
