A Stenotrophomonas acidaminiphila strain is provided to convert an unsaturated fatty acid into a hydroxy fatty acid effectively. A method for preparing a hydroxy fatty acid is provided to produce 10-hydroxy-12(Z)-octadecenoic acid selectively with high yield, which is an intermediate material of producing lactone and is used as a lubricant, by adding the Stenotrophomonas acidaminiphila strain and adjusting the concentration of fruit bodies, the concentration of a substrate, temperature and pH, thereby being widely used for obtaining useful hydroxy fatty acids with high specificity and without side products. A hydroxy fatty acid is obtained through bioconversion at a temperature of 25-33 deg.C under pH of 7.0-8.0 using Stenotrophomonas acidaminiphila, at least one fatty acid substrate selected from the group consisting of linoleic acid, oleic acid, linolenic acid, gamma-linolenic acid and palmitoleic acid, and at least one inducing material selected from the group consisting of linoleic acid, oleic acid, linolenic acid, gamma-linolenic acid and palmitoleic acid. A Stenotrophomonas acidaminiphila strain producing a hydroxy fatty acid is deposited as a deposition no. KCTC11064BP. Further, a concentration of the linolenic acid is 10 to 40 g/l as an unsaturated fatty acid substrate, and 0.1 to 1.2 g/l as an unsaturated fatty acid inducer.
