Post-harvest rice management technique using supercritical fluid for producing rice of high quality and grains produced by the same are provided to remove the offensive odor by directly treating the rice with supercritical fluid and to reduce the consumed energy needed to gelatinize starch during cooking rice. A grain production method comprises the steps of: directly pouring the harvested whole grains such as harvested rice, into an extractor without polishing rice by pounding and then, treating the whole grains at 40~45°C under pressure condition of 300~450 bars, by using carbon dioxide; pouring the treated grains into a pressure reducing separator and separating the grains and carbon dioxide; and polishing the grains separated from carbon dioxide, by using a rice polishing machine.
