Stop mechanisms (5a, 5b) are present, by means of which the two outer partial strips are supportable, where the middle strip is propelled continuously. The device for forming pretzel dough pieces (1), comprises a positioner, which has a knotting head (3) with two supporting elements (3a, 3b) arranged in a distance, and first conveyor belt (4) comprising two independently movable outer partial strips. The first belt conveyor has a middle strip, which is arranged between the two outer partial strips. Stop mechanisms (5a, 5b) are present, by means of which the two outer partial strips are supportable, where the middle strip is propelled continuously. Sensor elements are present, by means of which the stop mechanisms are operatable and which are arranged in conveying direction of the first conveyor in a distance before the support elements. A control system is present, by means of which the function of the knotting head is started, when the operation of the stop mechanisms is reversed. The device comprises a long roller for croissant and a long roller for strand, which has a first conveyor belt. The strand roller is arranged below the croissant rewinding stand. The croissant roller is present with an inlet and outlet and is extended between the croissant rewinding stand and the strand roller. The croissant roller has a second conveyor belt and a second working plate. The croissant roller at its outlet has a guidance, which extends up to the first conveyor belt of the strand roller.
