P the present invention relates to a gene coding for the glutamate dehydrogenase (gdh) of lactococcus lactis, to vectors carrying the said gene, and to their uses in the cheese-making industry. The said gene is in particular be used to transform of the lactic acid bacteria which do not express of gdh, or to detect in lactic acid bacteria, the presence of a gene coding for a gdh. The bacteria transformed or selected are in particular be used as lactic yeast to intensify the flavor of the cheeses and of the cheese specialities. / p
