PROBLEM TO BE SOLVED: To provide a dental caries-suppressing composition and a dental caries-suppressing food, each effectively suppressing production of glucan, because dental caries is directly caused by formation of dental plaque by glucan and acid fermentation from saccharide by bacterium.;SOLUTION: The dental caries-suppressing composition comprises an extract of mulberry leaf which suppresses glucan production from sucrose by GTase and inhibits production of insoluble glucan. The dental caries-suppressing food is obtained by combinedly using the composition with sucrose or combining the composition with a sucrose food. The food enables the lowering of dental caries-causing risk in a state in which merits of sucrose as a sweetener are retained.;COPYRIGHT: (C)2009,JPO&INPIT
