PPROBLEM TO BE SOLVED: To provide a method for producing a charbroiled flavor food and an apparatus for giving charbroiled flavor, as a method and an apparatus for giving sufficient charbroiled flavor to a food to be processed, capable of easily adjusting temperature of a food to be processed and performing quality control according to the temperature adjustment, and easily performing adjustment of mutual strength of flavoring and heating. PSOLUTION: This apparatus for giving charbroiled flavor has a smoke collecting apparatus 2 with a duct 1. A cylindrical fire resistant container 4 made of metal mesh and having mesh-like vent holes 3 enabling charcoal to continuously burn and a spraying device 7 capable of spraying edible oil and fat 6 through the vent holes 3 to charcoal pieces 5 put in the fire resistant container 4 are each set inside the smoke collecting apparatus. Furthermore, the apparatus for giving charbroiled flavor has a smoke contact chamber 9 which introduces smoke collected from the smoke collecting apparatus 2, brings the smoke into contact with a food material 8 to be processed and is made adjustable in temperature. The fire resistant container 4 is supported in the fire collecting apparatus 2 with an almost flat rotating shaft 10, and driven to rotate at a speed controlled with a motor 11 attached with a control mechanism.
