PROBLEM TO BE SOLVED: To provide a new means for producing fructosylamine oxidase.;SOLUTION: The new method for producing the fructosylamine oxidase acting on 1-deoxyfructosyl-L-valyl-L-histidine but not substantially acting on 1-deoxyfructosyl-L-valyl-L-leucine comprises culturing a DNA encoding a specific amino acid sequence derived from a fungus belonging to the genus, for example, Curvularia, Pyrenochaeta or Arthrinium and a host cell transformed with an expression vector containing the DNA.;COPYRIGHT: (C)2005,JPO&NCIPI
