Nucleic acid molecule encoding a fructosyltransferase selected from the group consisting of: (a) nucleic acid molecules encoding a protein comprising the amino acid sequence given in SEQ ID NO: 2; (B) nucleic acid molecules comprising the nucleotide sequence of the coding region given by SEQ ID No. 1 or a corresponding ribonucleotide sequence; (C) nucleic acid molecules hybridizing with the complementary strand of the nucleic acid molecules mentioned in (a) or (b) and exhibiting an identity of at least 60% with the nucleic acid molecule mentioned in ( a) or (b); and (d) nucleic acid molecules whose nucleotide sequence deviates from the sequence of the nucleic acid molecules mentioned in (c) due to the degeneracy of the genetic code; as well as nucleic acid molecules complementary to these.
