Preparation of an extract from fruits of genus Alliumcomprises: (a) producing an aqueous solution at 1-95[deg] C and at a pH of 3-12; (b) adding fruits of Allium, or its powder and stirring the aqueous solution for 1 minute-72 hours, where the reaction uses allinase containing fruits; (c) disrupting the allinase reaction by adding a water-immiscible organic solvent under stirring, where the stirring time is 2-60 minutes; (d) separating the reaction products of the allinase-reaction containing organic solvent; and (e) obtaining extract by distilling the organic solvent. Preparation of an extract from fruits of the genus Alliumwith standardized ingredient spectrum, comprises: (a) producing an aqueous solution at 1-95[deg] C and at a pH of 3-12; (b) adding fruits of Allium, or its powder and stirring the aqueous solution for 1 minute-72 hours, where the reaction uses allinase containing fruits; (c) disrupting the allinase reaction by adding a water-immiscible organic solvent under stirring, where the stirring time is 2-60 minutes; (d) separating the reaction products of the allinase-reaction containing organic solvent; and (e) obtaining extract by distilling the organic solvent. Independent claims are included for: (1) the extract, obtained by the above process; and (2) a pharmaceutical- and cosmetic-preparation comprising the extract. ACTIVITY : Antiinflammatory.
