The accessory has insertion planes (E1-E9) in a cooking chamber (2) for influencing heat input to a cooking material (10). The cooking material is located over the accessory in the planes. A part of the accessory has a deflection surface for deflecting parts of current of a cooking chamber atmosphere and/or a microwave radiation, where the accessory is located in a cooking material carrier insertion device (7). The deflection surface is partially inclined relative to the planes at an inclination angle adjusted by a control- or regulating device. A coating is made of metal oxide. Independent claims are also included for the following: (1) a cooking device comprising a heating device and a control- or regulating device (2) a method for guiding a cooking process in a cooking chamber of a cooking device.
