The cooking, drying or dehydratation machine for the treatment of products, comprises a cylindrical, conical or cylindrical-conical drum (1) including a heat exchanger (15) at its internal face, a fixed, heat insulated covering (3), and a fixed wall. The cylindrical-conical drum turns around an axis according to a horizontal axis of interior of the covering. A hot fluid is passed in a space (4) formed between the drum and the covering, and in interior of the exchanger. The exchanger is present in the form of helix or coil, and constituted of a hollow body provided with wings or blades (16). The cooking, drying or dehydratation machine for the treatment of products, comprises a cylindrical, conical or cylindrical-conical drum (1) including a heat exchanger (15) at its internal face, a fixed, heat insulated covering (3), and a fixed wall. The cylindrical-conical drum turns around an axis according to a horizontal axis of interior of the covering. A hot fluid is passed in a space (4) formed between the drum and the covering, and in interior of the heat exchanger. The exchanger is present in the form of helix or coil, and constituted of a hollow body provided with wings or blades (16). The hot fluid penetrates in the exchanger via an opening that passes over an axial shaft, and arises in an annular section belonging to a zone present between the drum and the fixed wall. A barrier and a radial and longitudinal heat seal are fixed on inner side of the fixed wall for providing an optimal heat in the drum. The heat is supplied by electrical resistances, micro-wave generators or other devices fixed on the internal face of the covering. Input temperature of the fluid in the exchanger is adjusted to an intended value by dilution according to an initial temperature measurement, and fluid flow in the machine is controlled according to a final temperature measurement.
