Colored sol-gel composition having a good juice content, for coating a substrate, comprises a mineral pigment, but not an organic dye, and at least a precursor mineral matrix and/or a precursor of hybrid matrix; or an organic dye and at least a precursor of hybrid matrix (I). An independent claim is included for a process of forming a colored coating with a good juice content on the substrate, comprising applying the composition on the substrate, hydrolysis of the matrix precursors in an acidic medium, adding the pigments and/or dyes, preferably in the presence of alcohol, and heat treatment.
