PPROBLEM TO BE SOLVED: To provide cereal flour capable of producing delicious bread without using food additives and special production processes. PSOLUTION: The invention provides cereal flour for bread containing 0.5-2.5 pts.mass of a raw embryo powder based on 100 pts.mass of the cereal flour or the sum the cereal flour and starch and having an ash content of ≤1.00 mass%, and bread produced by using the cereal flour. The cereal flour has excellent preservability in spite of the presence of embryo.
