The present invention relates to a formulation for the preparation of high protein vermicelli comprises the use of various protein sources and emulsifiers. The high protein vermicelli developed possesses creamish yellow colour, firm, discrete and non-sticky strands. The protein content of the developed product ranges from 16-17% when compared to 10-12% of control vermicelli.
