The invention relates to a catalytic process for manufacturing a composition of alcohol esters of linear monocarboxylic acids having 6 to 26 carbon atoms, from a neutral or acid, virgin or recycled plant or animal oil with monoalcohols having 1 to 18 carbon atoms, in the presence of a heterogeneous catalyst based on the hybrid solid with mixed organic/inorganic crystalline matrix IM-19. The crystalline solid IM‑19 could be used pure or in the presence of a binder.
