摘要

PURPOSE: A manufacturing method of soybean paste containing pine needles and pine pollen powder and the soybean paste are provided to improve taste of the soybean paste with calcium, all kind of vitamins, and choline, and to reduce the specific smell of the soybean paste.;CONSTITUTION: A manufacturing method of soybean paste containing pine needles and pine pollen powder comprises the following steps: boiling soybean and pine needles in water for 7 ~ 8 hours; making fermented soybean lumps by crushing the boiled beans; fermenting the soybean lumps in a loess room for 10 days; dipping the fermented soybean lumps in salt water; aging the dipped soybean lumps in a jar; fermenting the pine needles and pine pollen powder with the soybean lumps; and aging the soybean lumps for a constant period. The quantity of pine needles laid in the soybean lumps is 2 ~ 5 parts by weight based on the whole weight of the soybean lumps.;COPYRIGHT KIPO 2010
