PURPOSE: Red ginseng oil extracted from red ginseng or red ginseng dregs, and edible oil comprising the same is provided to have ginseng flavor and include high amount of vegetable sterol and unsaturated fatty acid so that it has effect about restricting the blood flow improvement and cholesterol, and a manufacturing method thereof having ginseng flavor. CONSTITUTION: Red ginseng oil is extracted from the red ginseng or red ginseng dregs and includes 0.1 to 10 weight% within whole to vegetable sterol. The vegetable sterol include one type selected form the group of comprising of campesterol, stigmasterol, -sitosterol, and mixture of them. The red ginseng oil is obtained by extracting the organic solvent 50ml~L about the red ginseng or red-streamed ginseng powder 1g in 4~80C for 30 minutes to 24 hours. The red ginseng oil is obtained form by adding the mixture of the red ginseng or red-streamed ginseng powder and organic solvent to a supercritical extraction tank and supplied the supercritical fluid into the tank and performing the mixture for high temperature of 3~$ hours as maintaining the tank pressure 300 to 500 bar. The organic solvent is one type selected among the group comprising the alcohol, hexane, acetone, and their mixed solvent. The edible oil and fat includes one type selected from the group among the sesame oil, the olive oil, the soybean oil, the grape seed oil, the sunflower oil, the rape oil, the linseed oil, the rice oil, the corn oil, the pumpkin seed oil, the peanut oil, the corn oil, the diglyceride oil, the safflower seed oil and their combination. The red ginseng edible oil includes red ginseng oil : edible oil at weight ration of 0.1:99.9~10.99. The red ginseng edible oil is manufactured by removing the organic solvent after adding the edible oil and fat to the red ginseng or red ginseng powder which is extracted for organic solution and extracts the fat solubility component.
