Substance of method consists in measurement of electric charge speed and speed of discharge of fruit tissue placed between two electrodes, as pulses of electric voltage are supplied to the latter for time of not more than 4 s, ratio of which is used to understand suitability of fruit for storage.;EFFECT: invention provides for reduction of forecasting error.;5 dwg
