Baking goods i.e. dark wholemeal rye bread, producing method for stoneware baking-oven for industrial and commercial application, involves separately determining heat emission behavior of stoneware plates for pre-baking and sintering stages
The method involves preparing heating phase for heating up of stoneware plates and a proceeding baking phase for baking the baking goods with heat radiating from the stoneware plates, where the baking phase consists of a pre-baking stage and a sintering stage. Heating up of the stoneware plates for each stage takes place separately. The heat emission behavior of the stoneware plates for the pre-baking stage and the sintering stage is separately determined, where the pre-baking stage runs with a higher baking temperature and the sintering stage runs with smaller baking temperature. An independent claim is also included for a stoneware baking-oven comprising a set lockable and stoneware plates.
