Release system comprises capsules, which exhibit a hydrophobic and oil-soluble capsule shell or a capsule matrix and a capsule content, in an oil-in-water emulsion comprising an aqueous phase and an oil phase dispersed in it. The oil phase triggers the destabilization of the emulsion, which dissolves the capsule shell or capsule matrix and thus releasing the capsule contents. An independent claim is also included for the controlled release of a substance, comprising (a) providing the capsules, (b) providing the oil-in-water emulsion, (c) introducing the capsules into the oil-in-water emulsion and (d) destabilizing the emulsion, so that the oil phase comes in contact with the hydrophobic and oil-soluble capsule or capsule shell matrix, resulting in the dissolution of the capsule shell or capsule matrix and thus releasing the capsule contents.
