The appliance (1) has a bypass (14) extending from high pressure regions (8, 9) to a food region. A loading device (17) is arranged within or outside a housing (2) and between pipe parts (15, 16) of the bypass. The loading device is filled with fluid containing fumigated flavor additive. The loading device is provided with a cleaning agent, maintaining agent and/or decalcifying agent. The loading device loads air flow with the flavor additive. The bypass is connected with a flow chamber at two points and produces a pressure gradient between the two points in operation.
