The machine has a set of jaws with synchronized movement by guide rails (M10), and guiding shoes (M9) mobilized by a toothed rack (M18). The shoes are driven by a pinion (M16) that is driven to by a crown (M12) by operation of a motor. A cutting blade (M7) is moved linearly on top of a toothed wheel (M8). One end of the cutting blade is aligned on a rotational axis of the toothed wheel for carrying out a to-and-fro movement along a central axis of the toothed wheel to perform a cutting process of food products located on a support placed under a cutting head (M6).
