The knife has a blade strip positioned in an extension of a rear of a handle or positioned at the top of the handle. A vertical displacement mechanism permits vertical displacement of a blade with respect to the handle so as to adjust the height of the blade on a bolster and fix the blade in chosen position. The bolster is situated above a top point at the rear of the handle. The blade is placed in a T-shaped housing.
