PROBLEM TO BE SOLVED: To provide flavor-improved rice, that is, to provide an improved flavor improver for cooked rice, to provide the flavor-improved rice, and to provide a method for producing the flavor-improved rice by using the improver.;SOLUTION: The flavor improver for cooked rice comprises an aqueous solution containing cherry lief powder, wherein, per 100 wt.% refined rice, the aqueous solution containing cherry lief powder is contained by 1-5 wt.%, and contains 0.1-0.5 wt.% cherry lief powder and 1-5 wt.% water. The flavor-improved rice does not comprise wash-free rice but comprises refined rice or quickly cookable rice. The method for producing flavor-improved rice comprises production steps serially treating a step for washing the refined rice with a rice washer, a step for soaking the refined rice in water, a step for removing water on the refined rice surface and a step for drying the refined rice with a drainer dryer to adjust moisture of the refined rice, wherein a coating step coating the whole surface of the refined rice with the flavor-improver is set after the step for removing moisture on the refined rice surface with a dehydrator.;COPYRIGHT: (C)2007,JPO&INPIT
