PPROBLEM TO BE SOLVED: To provide a new compound having an anti-oxidizing ability and obtained from an aqueous extract of walnut kernel. PSOLUTION: Works for purifying a walnut kernel aqueous extract faction having an anti-oxidizing ability have been repeated. Consequently, a compound represented by general formula (1) (R is a sugar residue or a quinolyl group which may have a carboxy group or a 1 to 4C alkyloxycarbonyl group) is isolated by extracting the kernel of the fruit of Juglandaceae, Juglans with a water-miscible organic solvent, removing the solvent, performing a solution extraction using water and an organic solvent non-miscible with water in an arbitrary ratio, taking out the aqueous phase, and then purifying the ingredient dissolved in the aqueous phase with column chromatography filled with an ion exchange resin and using a water-lower alcohol mixture solvent as an elution solvent, while checking the elution state.
