Sensing and quantification of preservatives in food products are becoming increasingly important in present scenario. Traditional analytical techniques are lagging behind the demand for more information in less time, at a lower cost. For the detection of common preservative we have developed strips coated and saturated with specific enzyme and proteins which identify a presence of preservatives using its electrochemical behavior and to convert its presence and concentration into perceivable and distinct electrical signals. The realization of rapid, sensitive, and specific methods to detect preservative is central to implementing effective practice to ensure food safety and security. As a principle of electrochemical behavior and to convert its presence and concentration into perceivable and distinct electrical signals has been applied in the field of food technology as a means to detect and/or quantify preservatives in the food products.
