The invention relates to the use of 2E,4E-decadienoic acid-N-isobutylamide (trans-peUitorin) as an aroma substance, in particular as a saliva-inducing aroma substance, preferably in preparations used in nutrition or in oral hygiene or consumed for pleasure. The invention further relates to preparations and semi-finished products as well as odour, aroma and flavour substance compositions comprising trans-peUitorin, as well as to a process for the preparation of trans-peUitorin.
