PURPOSE: A water-soluble nanoparticle of lipid-soluble food, a producing method thereof, and oil containing thereof are provided to improve the digestibility of the lipid-soluble food. CONSTITUTION: A producing method of a water-soluble nanoparticle of lipid-soluble food comprises the following steps: adding 0.001~20wt% of lipid-soluble food powder, and 0.001~20wt% of dispersant additive to 60~99.998wt% of ethanol(S111); heating the mixture for dissolving the lipid-soluble food powder and the dispersant additive(S112); evaporating the ethanol to obtain lipid-soluble food particles and the dispersant additive(S113); and dispersing the obtained substances into water(S114).
