The disgorging clasp for bottles for the production and storage of champagne, bubbly and/or sparkling wine, comprises ball valves with a housing (1) having an inlet opening and an outlet opening, where the housing includes a ball plug (4) equipped with a passage opening. The ball plug is sealably and rotatably arranged within two ring-shaped sealing elements and is positionable over a switch shaft (5) towards outside. The ball valves are connected at external side and form a sealable cavity within the housing through the rotation of the ball plug for the reception of the yeast residues. The disgorging clasp for bottles for the production and storage of champagne, bubbly and/or sparkling wine, comprises ball valves with a housing (1) having an inlet opening and an outlet opening, where the housing includes a ball plug (4) equipped with a passage opening. The ball plug is sealably and rotatably arranged within two ring-shaped sealing elements and is positionable over a switch shaft (5) towards outside. The ball valves are connected at external side and form a sealable cavity within the housing through the rotation of the ball plug for the reception of the yeast residues and/or fermentation residues. The ball valves are mounted with the inlet side sealable at the mouth piece of the bottle. The inlet interior diameter of the ball valves is similar to the interior diameter of the mouth piece. The ball vales have a sealing (3) of ball plug. The ball valves dispose a dead-space free sealing of the ball plug between the inlet and outlet opening of the housing in order to avoid undesirable media inclusions. The ball plug is surrounded up to the inlet opening completely by a dead-space free sealing. The cavity is lockable within the valve plug and forms sealings. The ball plug of the ball valves has no through-holes so that the lockable cavity forms itself in the valve plug. The valve plug comprises two opposite blind holes, where the first blind hole receives the fermentation residues and the second blindhole contains the dosage so that the fermentation product is simultaneously transferred through the rotation of the ball plug and is transferred with the expedition liqueur. The housing of the ball vales comprises pressure- and fluid tight openings at outlet side in order to remove the separated fermentation residue from the clasp and in order to introduce the expedition liqueur into the clasp. The ball vales comprise a mounting mechanism that consists of two or more levers, which are made of metal or plastic and are circularly arranged at the outlet side of the ball valves and are connected under the mouth bulge of the mouth piece. The levers produced through deflection under the clasp power. The levers of the mounting mechanism are deflected through the operation and/or rotation of a metal nut arranged over the levers at a thread of the clasp and are locked in desired position. The switch shaft is lockable with the ball valve housing and has an internal contour for the reception of a positioning lever.
