The present invention relates to the use of a by-product derived from a process for the extraction of the lysozyme from egg white, to obtain at least one basic protein of egg white. This by-product is a solution obtained at the end of a step of extraction of the lysozyme previously crystallized at basic ph on the basis of an eluate containing the protein fraction of egg white is retained on a support of the cation exchange chromatography. The present invention also relates to a process for the purification of at least one basic protein of egg white, comprising an operation of the extraction and purification of the said basic protein from said by-product derived from a process for the extraction of the lysozyme from egg white.
