In an industrial bakery plant, the quality control is effecctué by a process according to which bakery products still contained in the cells of a molding plate are subjected to them individually for a visiometry examination from above providing information of digital imaging at least as to their location in the corresponding plate, to automatically control their capture by means of different grippers of a matrix of grippers (including vacuum grippers or pneumatically operated needles), in order to submit them to a another visiometry examination that is performed from below while the products are hanging from the matrix of grippers.
