The object of the present invention is to develop a non-invasive and non-destructive method for assessing the degree of maturity by measuring the minimum and maximum fluorescence of the epicarp of a green mango still on the tree in order to determine the timing of the harvest that will ensure optimal fruit ripening after harvest.
