PPROBLEM TO BE SOLVED: To provide a methane fermentation method of organic waste by which the amount of use of a coagulant can be suppressed and methane fermentation treatment can be simplified with respect to the methane fermentation for obtaining biogas by anaerobic bacteria degradation after solubilizing organic waste. PSOLUTION: The methane fermentation method of organic waste includes: a process of treating the organic waste A with subcritical water in a closed treatment container 22; a subsequent process of evacuating and dehydrating subcritical water treated material in the compressed state to obtain dehydrated material; and a process of charging the dehydrated material C into a methane fermentation tank 23 to perform methane fermentation.
