A method of determining 1,5-anhydroglucitol, comprising using (a) a protein consisting of the amino acid sequence of SEQ ID NO: 2; or (b) a protein consisting of an amino acid sequence having a homology of at least 75% with the amino acid sequence of SEQ ID NO: 2 and having sorbose dehydrogenase activity.
