The invention relates to a device (10) for extracting the flank bones (11) ofbeheaded, slaughtered fish having openabdominal cavities that are transported on transport saddles (15), comprisingam upper bone guide (12), a lower bone guide (13)and a separating unit (14) for detaching fish fillets from the flank bones(11), the separating unit (14) comprising a separating means(16) having a corresponding counter unit (17) and being movable from a waitingposition into a working position and vice versa,characterized in that the separating means (16) is a rotating circular blade(18) and the counter unit (17) is a stationary element (19),wherein the circular blade (18) and the element (19) can be pivoted about twoaxes and that the element (19) can be moved relativeto the circular blade (18) and independently thereof.
