PURPOSE: A method for manufacturing clear Dongdongju containing Nelumbo nucifera is provided to ensure soft taste and flavor and excellent storage property. CONSTITUTION: A method for manufacturing clear Dongdongju containing Nelumbo nucifera comprises: a step of mixing water and bred yeast and culturing for 0.5-5 days to prepare crude liquor; a step of mixing 100 weight parts of steamed glutinous rice, 10-40 weight parts of ferment, 1-10 weight parts of saccharogenic amylase, 5-30 weight parts of saccharide, and 150-300 weight parts of water and adding 1-4 weight parts of dried Nelumbo nucifera leaves; a step of fermenting the mixture at 22-28 C for 14-28 days to prepare crude liquor; rice-wine mash; and a step of filtering upper crude liquor.
