PURPOSE: Fish cake containing hizikia fusiforme and a producing method thereof are provided to secure the unique chewy texture and consistency of fish cake and to offer the functionality of hizikia fusiforme to the fish cake. CONSTITUTION: A producing method of fish cake containing hizikia fusiforme comprises the following steps: dipping 15-50 parts of raw hizikia fusiforme by weight into 100 parts of 0-5 deg C water by weight for 15-20 minutes, and washing the raw hizikia fusiforme for removing salt and foreign materials(S10); mixing 100 parts of 15-20 deg C water by weight, 1-3 parts of salt by weight, and 2-3 parts of flour by weight, and dipping 40-60 parts of raw hizikia fusiforme by weight into the mixture after removing the salt and the foreign materials for 10-20 minutes before stirring(S20); washing the stirred raw hizikia fusiforme with 0-5 deg C water for removing the salinity and mucilage(S30); aging the raw hizikia fusiforme for 20-30 minutes in 50-60 deg C water, and inserting 7-15 parts of processed hizikia fusiforme by weight into 100 parts of fish flesh by weight before crushing and mixing; adding salt, flour, starch, sugar, and ice or cold water into the fish flesh mixture to obtain fish paste dough(S40,S50,S60); and frying the fish paste dough after molding(S80).
