PURPOSE: A Leuconostoc mesenteroides YLB 8 with a bioconversion ability of ginsenoside is provided to produce ginseng products with high value added.;CONSTITUTION: A Leuconostoc mesenteroides YLB 8 has a bioconversion ability of ginsenoside. A method for preparing a ginseng fermentation comprises a step of adding Leuconostoc mesenteroides YLB 8 to ginseng extract and culturing. A method for preparing the ginseng fermentation comprises a step of converting ginsenoside Rb1 and Rb2 into Rg1 and Rg3, respectively.;COPYRIGHT KIPO 2013
