The knife holding device comprises a centered metal-middle shaft (4) and traveling paths for fixing the knife. A crossbar (6) is provided, which is positively attached as mechanical carrier in a stand area (2) of a barbecue grill (1) at the base of the housing of a kebab or gyros grill oven. Angular displacing extension arms (7) are positively fixed to the ends with hinge unit (9) and are elaborated as equal leveled base plates.
