The installation has a support (2) i.e. plate, in which a housing (3) receives a rising portion of a shoe or thin straps (21) of a sole so as to protect the thin straps from a cutting unit (10) e.g. cutter. A flange (4) is located at periphery of the housing. A face of the sole is supported against the flange and comprises the rising portion of the shoe or the thin straps so as to maintain the sole outside the housing and make its contour accessible by the cutting unit. A maintaining device i.e. plate (5), maintains the sole in support position against the flange. An independent claim is also included for a method for cleaning and dressing a sole fixed on a rising portion of a shoe or equipped with thin straps on one of its two faces.
