The invention relates to a device and a method for measuring the properties of a complex medium (2) by analyzing the evolution of the light backscattered by this complex medium (2) after a preliminary stirring step. For this purpose, the device and the method according to the invention, moreover in accordance with the generic definition given in the preamble above, is essentially characterized in that it comprises means for setting in motion (14) suitable imposing on said receiving means (6) a stirring movement comprising at least one reciprocating motion in a directional vector extending in a non-negligible proportion along the longitudinal direction, so as to cause shear stresses in the complex medium (2) causing the destruction of aggregates of said complex medium (2) when said container (4) is received and supported by the receiving means (6).
