The apparatus comprises a set of first materials (RV) allowing wines or low wines introduced in the still to be reheated by the extracted vinasse or flegmasses, a set of second materials (RE) to capture a part of energy for vaporizing the charge of still for restoring it by heating, and a concentration column (C) placed between a boiler (Chal) of the still and first and second condensers. The set of RV materials comprises a tank for receiving vinasses and flegmasses for intermediate storage of hot dealcoholized liquid evacuated from the boiler of the still. The apparatus comprises a set of first materials (RV) allowing wines or low wines introduced in the still to be reheated by the extracted vinasse or flegmasses, a set of second materials (RE) to capture a part of energy for vaporizing the charge of still for restoring it by heating, and a concentration column (C) placed between a boiler (Chal) of the still and first and second condensers. The set of RV materials comprises a tank for receiving vinasses and flegmasses for intermediate storage of hot dealcoholized liquid evacuated from the boiler of the still, a liquid-liquid surface type exchanger sufficiently dimensioned, and pumps and circuits for transferring counter-current flow of vinasses or flegmasses evacuated with the low wines or wines feeding the boiler of still through above designed exchanger. The set of RE materials comprises a vertical tubular bundle (F1) that is sprinkled inside of tubes by water condensed of hot steam by a first pump and is fed the vapor phase on outside of tube by the water-alcoholic steam emitted by the boiler of still, a horizontal tube bundle (F2) that is dewatered and sprinkled the outside of the tube by low wine or wine using a second pump and is fed the vapor phase on inner side of the tubes by the hot steam obtained from a steam ejector with steam jet that provides, by the mixture with steam engine, pressure operated by sucked steam under depression generated by the vertical tubular bundle towards the horizontal tube bundle, a device for degassing the horizontal tube bundle, and a device for transferring condensates of water vapor from the horizontal tube bundle to the vertical tube bundle then to the boiler in return. The concentration column: comprises a plates to ensure, by a reflux, a casting at alcohol concentration of greater than 75 vol.%; is connected in vapor and liquid phases at the bottom part of the boiler of the still and in the upper part of condensation device constituted by vertical tubular bundle and the second condenser; and is isolated, where the connection in the vapor phase is directly done from the boiler of the still towards the vertical tubular beam. The steam-ejector comprises thermo-compressor nozzles, and stato-booster nozzles. The degassing device comprises a condenser and a vacuum pump. An independent claim is included for a process for transferring energy available at the outlets of a still for heating.
