Forming drops (12) of a first phase (14) dispersed in a second phase (16) substantially immiscible with the first phase, comprises providing a first fluid (36) comprising the first phase and a first polymer precursor of the coacervate content in the first phase; forming drops of the first fluid into a second fluid (40) for forming the second phase; supplying a second polymer precursor of the coacervate in the second fluid; and creating the coacervate layer by interaction between the first polymer precursor and the second polymer precursor. Forming drops (12) of a first phase (14) dispersed in a second phase (16) substantially immiscible with the first phase, where each droplet has a core (17) formed of the first phase and a shell (18) formed of a coacervate layer interposed between the first phase and the second phase, comprises providing a first fluid (36) comprising the first phase and a first polymer precursor of the coacervate content in the first phase; forming drops of the first fluid into a second fluid (40) for forming the second phase; supplying a second polymer precursor of the coacervate in the second fluid; and during the formation of each droplet, or once each drop formed, creating the coacervate layer by interaction between the first polymer precursor and the second polymer precursor at the interface between the first phase and the second phase. An independent claim is included for a dispersion of drops of the first phase in the second phase substantially immiscible with the first phase obtainable by the above process.
