The installation comprises a table having a lower face and an upper face on which the product to be crusted extends, a unit (1, 4) for injecting a cryogenic liquid such as liquid nitrogen in an interior of the table, a unit (2) for evacuating the gas resulting from the vaporization of cryogen, a unit (6) for regulating a temperature of a surface of the upper face of table, and a data processing unit for restoring a value of temperature of gas at a setpoint. An interior of the table is equipped with a baffle structure (3) within which the cryogen circulates. The installation comprises a table having a lower face and an upper face on which the product to be crusted extends, a unit (1, 4) for injecting a cryogenic liquid such as liquid nitrogen in an interior of the table, a unit (2) for evacuating the gas resulting from the vaporization of cryogen, a unit (6) for regulating a temperature of a surface of the upper face of table, and a data processing unit for restoring a value of temperature of gas at a setpoint.
