PROBLEM TO BE SOLVED: To provide a novel composition preventing blackening/browning which is capable of preventing browning of food, particularly a fruit such as an apple.;SOLUTION: The characteristics of the technology for solving the problem are as follows: (1) a composition preventing blackening/browning for use in food, containing an extract of a cherry; (2) a composition preventing blackening/browning for use in food according to (1), wherein the cherry is a cherry blossom, and; (3) a composition preventing blackening/browning for use in food according to (1) or (2), wherein food is an apple.;COPYRIGHT: (C)2013,JPO&INPIT
