摘要

The invention relates to the immobilisation of fermentation fungi and/or galactic bacteria in Pistacia lentiscus and Pistacia terebinthus with use of a biocatalyst in liquid or lyophilized form for the production of diary products (yogurt, cheeses, milk-based desserts), as well as for the alcoholic fermentation of sweetened solutions (must, wort); use of same in repeated fermentation batches or in the continuous production of alcohol and alcoholic beverages (wine, beer etc). The use of the immobilized biocatalyst in the aforementioned production processes has beneficial effect on the human organism; it improves the quality and aroma of the resulted products and prolongs the preservation time thereof; it increases the fermentation velocity and, consequently, the alcohol production (in case of alcoholic drinks) which becomes thus more economical.
